Ingredients:
350 g of eggplant
350 g of zucchini
350 g of green and red pepper of color
350 g of onion
500 g of tomato very ripe(mature)
3 cloves of garlic
6 soup spoons of olive oil
1 stalk of thyme
1 bay leaf
Pepper
Salt
1.Cut tomatoes peeled
2.Cut Eggplants and zucchinis in slices
3.Slice thinly peppers in small strips
4.And the onion in rounds.
5.Warm 2 soup spoons of oil in a frying pan
6.And melt it onions and peppers.
7.When they are soft, add tomatoes, chopped garlic, thyme and laurel.
8.Salt, pepper and let plot slowly under cover for 45 minutes.
9.Meanwhile, prepare eggplants and zucchinis. Make them cook séparemment or not in the olive oil during 15 minutes.
10.Verify the cooking of vegetables so that they are not firm any more. Add then to the mixture of tomatoes and extend the cooking on any small hanging fire 10 min.
11.Salt and pepper if need it is ready !
